Duck Master Craig brought this recipe to the office for our weekly duckinapot lunch. Its his version of his favorite meatloaf recipes. He took his favorite ingredients form his Mom’s recipe and from a recipe made at the local firehouse and made it his own. Try it out. You will love it. Its robust, spicy comfort food at its best. Remember to get your duck in a pot!
Cook the chorizo until brown
Combine all the meat in a large mixing bowl
Add the onion, green pepper, garlic and chilies
Add the eggs and bread crumbs
Add 1 package of meatloaf seasoning
Mix all ingredients well
In a large baking pan and shape meatloaf in the pan (leave at least 1 inch around the edges)
Top with bacon
Bake for 30-45 minutes and check the temperature of the meat
Serve with a side of mash potatoes
