INGREDIENTS
4 boneless skinless chicken breasts
2 pounds of your favorite pasta (We like rotelli or fusilli for this dish)
2 cups chicken broth
1/4 cup soy sauce
1/4 cup Italian dressing
4 ounces tablespoons chili paste
2-4 tablespoons jalapeno pepper sauce
1 cups creamy peanut butter
Olive oil
Chili pepper flakes
Salt & Pepper
Serve with lemon chopped scallions, peanuts & cilantro
Prepare The Chicken
Heat a large sauté pan to medium heat
Add 4 boneless skinless chicken breasts to grill
Drizzle chicken with a little olive oil
Sprinkle lightly with chili pepper flakes
Drizzle with Jalapeno sauce
Season with salt & pepper
Grill until done
Turn off the heat but do not clean the pan. We will be using the grill bits for the sauce
Cut chicken into bit size pieces (large crouton size) and put aside
Prepare the Sauce
Use the sauté pan from grilling the chicken
Bring to medium heat and add:
- 2 cups chicken broth
- 1/4 cup soy sauce
- 1/4 cup Italian dressing
- 4 ounces tablespoons chili paste
- 1 tablespoon jalapeno pepper sauce
- 1 cups creamy peanut butter
Cook until smooth and take it off the heat
Mix the sauce with the chicken and the and mix with pasta and chicken
Prepare the Pasta
Cook 2 pounds of your favorite pasta
We like rotelli or fusilli for this dish
Mix the sauce with the pasta
Serve
Plate the Thai Spicy Peanut Butter Chicken Pasta
Sprinkle with chopped scallions, peanuts & cilantro
Squeeze ½ lemon on each serving
