Do you every just want breakfast for dinner? Well, the Ducks have the answer with this White Trash Hash. We made it two ways, so you can decide if you want to keep that petite ducky figure or go hog wild with the DuckMaster Craig version. INGREDIENTS FOR THE HASH
6 tablespoons vegetable oil
3 pounds frozen hash browns (not thawed)
3 large onion, diced
3 bell pepper, chopped
9 cloves garlic, minced
3 jalapeños, thinly sliced
3 cups Shredded Monterey Jack
12 large eggs
kosher salt
ground black pepper
2 bunches of chopped chives, for garnish
INGREDIENTS FOR THE GRAVY
1 pound Italian sausage, casings removed
1 pound chorizo, casings removed
1 pound turkey sausage, casings removed
6 tablespoons all-purpose flour
3 cups whole milk
Pinch of cayenne pepper
DIRECTIONS
PREPARATION
Dice 3 large onions
Dice 3 bell peppers into medium chunks
Mince 9 cloves of garlic
Slice 3 jalapeños into rings
Shred 3 cups of Monterey Jack cheese
Chop 2 bunches green onions/chives, for garnish
Remove casings from:
1 pound Italian sausage
1 pound chorizo
1 pound turkey sausage
Separate each of the items above into ½ and put in separate bowls.
we are making two versions of this dish. One with beef sausage and chorizo, and one with turkey sausage.
COOK TIME
Pull out two large skillets.
One for the healthy version and one for the mid-west version.
For the remainder of this recipe add ½ of the ingredients in each skillet
Heat vegetable oil in each of the skillet
Add hash browns in each of the skillet
Add Salt and pepper
Cook for 15-20 minutes or until crispy
Flip over and salt and pepper that side
Cook 15-20 minutes more, until golden and crispy.
Add onions and bell pepper and season with salt and pepper.
Cook until tender, 5 minutes more.
Add garlic and sliced jalapeño and cook about 1 minute.
Add cheese to hash browns and let melt, 2 minutes.
Stir together so hash browns are fully cheesy.
Make four nests for eggs and crack eggs in each.
Season eggs with salt and pepper.
Cover and cook until whites are set and yolks still slightly runny, 8 minutes.
GRAVY (At the same time you are preparing the hash browns)
Cook sausage and chorizo in a medium skillet over medium heat until browned.
In another Skillet, do the same with the turkey sausage.
Sprinkle 3-4 tablespoons flour over the sausage in both skillets and cook 1 minute.
Pour in 1 ½ cups milk and bring mixture to a boil.
Reduce heat and simmer until very thick, about 5 minutes.
Season with salt, pepper, and cayenne. Remove from heat.
Serve hash drizzled with breakfast gravy and garnished with chives.
