BANANA NUT CHOCOLATE CHIP MUFFINS
Ingredients:
1¾ cup all-purpose flour
1 cup sugar
1 teaspoon baking soda
½ teaspoon salt
2 large eggs
3 very ripe bananas
½ cup vegetable oil
1 teaspoon vanilla
1 cup crushed walnuts
1/2 to 1 full 12-ounce bag of semi-sweet chocolate chips. Chocoholics know what to do.
Preheat oven to 330 degrees F
In a medium bowl:
3 overly ripe peeled bananas
Mash with a potato masher, spoon or fork for about 4 minutes until lumpy smooth
Then mix in:
Two large eggs
1 teaspoon vanilla
½ cup vegetable oil
In another bowl mix:
1¾ cup all-purpose flour
1 cup sugar
1 teaspoon baking soda
½ teaspoon salt
1 cup crushed walnuts
1 12-ounce bag of semi-sweet chocolate chips (or less if you aren’t a chocolate lover)
Slowly add in the wet ingredient bowl
Lightly spray muffin liners with Pam
Add the liners to a giant muffin pan
Add the mix to each liner ½ full
Bake for 25 – 30 minutes
Check it with a toothpick or just watch for a deep brown top.
