Chesdens Toasted Ravioli

 

INGREDIENTS
1 or 2 packages (about 30 ­ 40 raviolis)
frozen cheese ravioli
Italian­style breadcrumbs ­ 1 cup
pancake mix ­ 1/2 cup
provolone cheese ­ 1/2 pound sliced
chopped fresh parsley ­ for coating ravioli
marinara sauce ­ from a jar ­ works just fine
vegetable oil ­ for frying
flour ­ 1 cup
salt ­ 1/2 teaspoon
black pepper ­ 1/4 teaspoon

INSTRUCTIONS

  1. Heat 4 inches of oil in a deep frying pan or deep fryer over medium-high heat until a deep-fry thermometer registers 350 degrees F.
  2. For the wet mix, in a pan, combine:
    • 1 cup flour
    • 1/2 cup pancake mix
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper
  3. Add enough water to get the consistency to a thick batter.
  4. In another pan  add 1 cup Italian-style breadcrumbs in a shallow bowl.
  5. Dip ravioli into the batter and let excess drip off, then dip into bread crumbs to coat.
  6. Fry ravioli in hot (350 degrees) for 2 to 3 minutes, or until golden brown.
  7. While still hot, add a square of provolone cheese on each ravioli
  8. Pop them under the broiler for about a minute to make the cheese bubbly
  9. Coat with some fresh parsley.
  10. Serve with your favorite heated marinara sauce.
