INGREDIENTS
1 or 2 packages (about 30 40 raviolis)
frozen cheese ravioli
Italianstyle breadcrumbs 1 cup
pancake mix 1/2 cup
provolone cheese 1/2 pound sliced
chopped fresh parsley for coating ravioli
marinara sauce from a jar works just fine
vegetable oil for frying
flour 1 cup
salt 1/2 teaspoon
black pepper 1/4 teaspoon
INSTRUCTIONS
- Heat 4 inches of oil in a deep frying pan or deep fryer over medium-high heat until a deep-fry thermometer registers 350 degrees F.
- For the wet mix, in a pan, combine:
- 1 cup flour
- 1/2 cup pancake mix
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Add enough water to get the consistency to a thick batter.
- In another pan add 1 cup Italian-style breadcrumbs in a shallow bowl.
- Dip ravioli into the batter and let excess drip off, then dip into bread crumbs to coat.
- Fry ravioli in hot (350 degrees) for 2 to 3 minutes, or until golden brown.
- While still hot, add a square of provolone cheese on each ravioli
- Pop them under the broiler for about a minute to make the cheese bubbly
- Coat with some fresh parsley.
- Serve with your favorite heated marinara sauce.
