This is a fast and easy way to make a delicious lasagna with no meat. It uses parsley to give it texture and bite.

You can make just the sauce or add meat from this recipe “Traditional Pasta Sauce With Sausage, Meatballs and Pork” if you are feeding carnivores.
We found using a 3 inch deep pan works well.
This recipe makes enough for a large lasagna pan and will feed 6-8 people. You can adjust the recipe as needed.

Ingredients
1 Boxes of lasagna Pasta
2 Bottles of Sauce – or make your own.
16 to 32 ounces Whole Milk Mozzarella Cheese (balls or shredded)
30 to 32 ounces of Ricotta Cheese
1 Cups Parmesan Cheese
1 Cup freshly chopped Italian Flat Leaf Parsley
1 Teaspoons Basil
1 Teaspoons Salt
1 Teaspoons Pepper
2 Eggs
You will need a large bowl for mixing and about a 3-quart Lasagna pan which is about 10 x 13
Preparation:
Boil water with olive oil and salt.
Add the lasagna noodles.
Boil for about 8-10 minutes (they should be al dente. They will finish cooking in the oven).
While boiling the lasagna, cut the Mozzarella Balls into slices (unless you bought shredded).
Chop the Parsley (fine).
Preheat oven to 350° F (if you plan on baking today).
In a large bowl mix:
1 lbs. Ricotta Cheese.
¼ Cup Parmesan Cheese.
2 Eggs.
1 Cup fresh finely chopped Parsley.
Mix it up.
Add 1 Teaspoons Basil Pepper to taste.
Only add salt if you think it needs it.
Mix again.
In a Lasagna Pan start layering:
- Sauce on the bottom of the pan.
- Lasagna Noodles slightly overlapped.
- Spread the Ricotta mixture on top of the noodles.
- Sprinkle the Mozzarella cheese on top of the Ricotta.
- Add a light coating of Parmesan Cheese.
Start again until you get about 3 or 4 layers.
Bake:
You can put it in the refrigerator for baking the next day if you like.
When you are ready to bake:
Preheat the oven to 350° F.
Cover the pan with tin foil and bake for 50-60 minutes.
Let it cool for at least 30 minutes before serving.
