The Ducks at Duck in a Pot decided to Duck up their baked potatoes with the same ingredients you would put in your favorite loaded taco. So we made our favorite loaded potato called a PoTaco Especial. Arriba.
Taco Seasoning Ingredients
2 tablespoons chili powder
2 teaspoons garlic powder
2 teaspoons onion powder
1 teaspoon cayenne pepper
1 teaspoon paprika
2 teaspoons ground cumin
2 teaspoons sea salt
2 teaspoons black pepper
1 teaspoon dried oregano
PoTaco Especial Ingredients
1 pound ground beef
1 pound ground turkey
8 baking potatoes
Taco seasoning mix
Toppings
1 chopped white onion
1 container Sour cream
1 cup sharp cheddar cheese, shredded
4 sliced jalapeno peppers
1 can sliced black olives
1 cup Pico De Gallo
1 cup Salsa
1 cup Guacamole
1 pound bacon
Instructions
Make or buy
Taco seasoning
Guacamole
Pico de Gallo
Salsa
Chop, Cut, Slice
Chop one white onion
Shred 1 cup of sharp cheddar cheese
Slice 4 jalapenos into rings
Cook the bacon
When done, add a small amount of the bacon grease to the turkey meat to give it some fat.
Bake the Potatoes
Preheat oven to 415°
Clean 8 monster russet potatoes
Spray each potato with cooking spray
Season with salt and pepper
Place on a baking sheet
Bake for two hours (this will make them super crispy on the outside).
While potatoes are baking prepare the meat
Brown ground beef and the ground turkey in a sauté pan.
Drain the grease.
Sprinkle ground beef and turkey with taco seasoning.
Add ½ cup water and mix.
Return to sauté pan and burner and simmer for about 5 minutes.
Serve
Cut the potatoes in half lengthwise.
Don’t cut all the way through, butterfly them.
Squish them to push some of the potato up
Remove a couple tablespoons of potato so you have a lot of room for the toppings
Add the toppings of your choice
