INGREDIENTS
1 lb lean ground beef
1⁄2 lb chorizo sausage, casing removed (not the fully cooked kind)
3 cloves garlic, minced
½ onion, chopped
½ cup uncooked long grain rice
1 egg, beaten
¼ cup fresh mint, chopped
¼ cup fresh parsley, chopped
¼ cup fresh oregano, chopped or about 1 tbsp dry oregano
1 tsp ground cumin
½ tsp chili powder
1/2 chopped onion
6 minced garlic cloves
6 cups chicken broth
4 chopped carrots
1/4 teaspoon cayenne pepper
4 chopped tomatillos
4 chopped potatoes
4 chopped zucchinis
2 corn on the cob
Fresh cilantro and avocado slices for garnish
2 limes
Flour tortillas.

INSTRUCTIONS
For the Meatballs
In a bowl add all the meatball ingredients together and mix well:
- 1 lb lean ground beef
- 1⁄2 lb chorizo sausage, casing removed (not the fully cooked kind)
- 3 cloves garlic, minced
- ½ onion, chopped
- ½ cup uncooked long grain rice
- 1 egg, beaten
- ¼ cup fresh mint, chopped
- ¼ cup fresh parsley, chopped
- ¼ cup fresh oregano, chopped or about 1 tbsp dry oregano
- 1 tsp ground cumin
- ½ tsp chili powder
- 1/4 tsp salt
- 1/4 tsp pepper
Shape into meatballs about 1 inch in diameter.
You should get about 30 to 35 meatballs, depending on how big you make them.
Place meatballs in fridge until ready to add to soup
For the Soup
Heat olive oil in a heavy bottom 8 quart pot or dutch oven to medium heat.
Add 1/2 chopped onion and 6 minced garlic cloves and cook for 2-3 minutes, being careful not to burn the garlic.
Add 6 cups chicken broth, 6 cups water then add:
- 4 chopped carrots
- Add a dash of cayenne pepper to adjust the heat level to your liking.
Bring to a boil and turn down heat, then add:
- 4 chopped tomatillos
- 4 chopped potatoes
- 4 chopped zucchini
- Corn on the cob pieces
- Add meatballs to pot one at a time, slowly. Using a wooden spoon slowly stir.
Cover and let cook over low to medium heat for another 15 minutes or until meatballs are cooked through.
Add lemon juice and salt and pepper and taste and adjust for seasoning.
Add fresh cilantro and avocado slices for garnish
Serve with four tortillas
